As in, all the new elements and attributes it brings like the <audio> and <video> tags, the <canvas> tag or the <header>, <section> and <footer> tags?

I do and have been for a while. I'm also hoping that in future the likes of XenForo and IPB use more than just the doctype and actually use the new stuff it introduced as well, I think things like the new form field types would be brilliant to use in forum software.

So do you use HTML 5 when building websites? And if not, why not?

Not yet. I think I'll wait until it's officially released and fully supported by most (if not all) browsers. For now, I've only gotten rid of some tags that will be obsolete once it's out, like the <center> one (if my memory doesn't fail).

Some of the new tags make website building so much easier. Some of the older tags still work better but are not compatible. So it really depends on what I am working, who it is for and why it has to be done that way. Most of the browsers if updated support HTML 5.
