Try a posting contest. Whoever gets the most posts by the contest end date wins the prize. I'm sure you've heard that one already, but it works for members who really want the prize.
Do you have any resellers or merchants on your forum? If so, let them have the contest, and you just help them promote it. For small forums that might be difficult, but on larger forums you could have people beating down your door to get exposure.
